Carmen's Favourite Cocktails

We asked Fresh Catering to share two Spanish-inspired cocktail recipes to get you in the mood for Bizet’s rollicking ride through Spain. So next time there’s a spot by the bar cart, you can step right up and let your inner mixologist out.


Hermosita (Blood Orange Mimosa)

Serves 1 (multiply the below ingredients by as many as you wish to make)

Ingredients

  • 100ml sparkling wine
  • 30 ml freshly squeezed orange juice
  • 20 ml blood orange puree
  • an orange twist and slice of orange

Equipment

  • Champagne flute
  • Chopping board & knife
  • Spirit measure/jigger
  • Bar spoon

Method

  1. Combine orange juice and blood orange puree in the base of a champagne flute.
  2. Add a nib of sparkling wine and stir.
  3. Gently pour the rest of the sparkling wine.
  4. Garnish with an orange twist and orange wheel.
  5. Say cheers!

Red Sangria (hot or cold)

Serves 1 (multiply the below ingredients by as many as you wish to make)

Ingredients

  • 75ml red wine
  • 15ml Triple Sec
  • 65ml orange juice
  • 15ml sugar syrup – recipe below
  • 3 slices green apple, cut into small pieces
  • 3 grapes, halved
  • 3 slices of orange, cut into small pieces
  • 3 slices of lemon, cut into small pieces
  • Cinnamon stick
  • 100 g ice

Equipment

  • Highball glass
  • Chopping board & knife
  • Spirit measure/jigger
  • Saucepan or heating pot and scoop
  • Straws

Method

To make sugar syrup
  1. Combine equal parts water and white sugar (one cup water, one cup sugar is a good place to start) in a small saucepan over low heat. Stir until sugar dissolves, then simmer for 2 minutes. Remove from heat and when cool, store in refrigerator and use as needed.
To make cold sangria
  1. Combine all liquids in a glass
  2. Garnish with cut fruit and a cinnamon stick. If you have a blowtorch, you can slightly burn the surfaces of the cinnamon to release the flavour.
To make hot sangria
  1. Combine all liquids and the cinnamon stick in a saucepan over low heat.
  2. Simmer for 1 hour.
  3. Serve in heatproof glasses or mugs, garnished with sliced fruit.
  4. Make a toast!
